2 cups whole-wheat flour.
¾ cup all-purpose flour.
1 teaspoon of freshly ground cardamom seeds.
2 teaspoons salt.
1 cup warm buttermilk.
⅔ cup of ghee or melted butter.
2 tablespoons vegetable or peanut oil.
2 teaspoons cumin seeds.
1 cup of hot curry powder.
4 garlic cloves, crushed.
2 teaspoons of fresh ginger, finely grated.
1 cup of small cauliflower florets.
2 teaspoons salt.
2 boiled, peeled, and coarsely mashed russet potatoes or Yukon Gold potatoes.
⅓ cup finely chopped fresh cilantro.
π©π³ How to Make Aloo Gobi Paratha
1,Saute filling: Saute spices, garlic, ginger and cauliflower. Serve with mashed potatoes, salt and cilantro. Cool.
2. Prepare the dough: Combine the flours, cardamom, salt, buttermilk and ghee. Knead, rest and divided into 8 balls.
3. Stuff & roll: Stuff potato cauliflower mixture in each dough ball, seal with dough and roll into 6" paratha.
4. Cook: Cook on a hot skillet with ghee until golden brown and crisp on both sides. Serve hot.
