Pasta with Whole Garlic, Goat’s Cheese & Thyme – Easy Dinner Recipe

Cooking garlic gently in extra-virgin olive oil transforms the cloves into soft, golden and naturally sweet bites. Crumbly goat's cheese gives a wonderful creamy and tangy end and fresh thyme gives a fragrant herbal flavour. 
πŸ›’ Ingredients

πŸ§„ 1 very large head of garlic

πŸ«’ An additional 50 ml (2 fl oz) of extra-virgin olive oil.

🌿 About 6 fresh thyme sprigs

🍝 175 g (6 oz) dried pasta

πŸ§€ 175g (6oz) crumbled white goat's cheese

πŸ§‚ Salt, for the pasta water

πŸ‘©‍🍳 How to Make It

Step 1: Prepare the Garlic

Have the garlic ready and gently smash the cloves with the flat side of a knife. This will help to loosen the skins. Remove the papery skins. 

Step 2: Gently cook the garlic.

Put the olive oil and garlic into a small frying pan. Bake over low heat for 20–25 minutes, occasionally turning, until the garlic is softened, golden and sweet.

Tip: Be careful not to let the garlic burn as it can become very bitter. 

In Step 3, add Fresh Thyme.In Step 3, add Fresh Thyme.

Remove the leaves from the thyme and stir in the garlic approximately 15 minutes after cooking has started. Continue cooking gently. 
Step 4: Cook Pasta

Cook the pasta in boiling water until al dente, while the garlic is cooking. Drain the pasta, keeping some pasta water, if using.

Step 5: Putting it all together

Add the cooked pasta to the fragrant olive oil, soft garlic cloves and fresh thyme. Top with the goat's cheese and lightly toss in the pasta. 

✨ Serving Suggestion

Serve hot. For an attractive finish, top with a few fresh thyme leaves and an extra crumble of goat’s cheese. A little extra-virgin olive oil will bring even more richness.
