A delightful combination of coconut milk and basmati to create a cozy South Indian meal, this is an easy Coconut Rice recipe. 🛒 Ingredients 1¼ cups basmati rice 2 cups coconut milk 2 tbsp peanut oil 1 tsp mustard seeds 1½ tsp salt 👩‍🍳 Method Wash and soak rice for 30 minutes. Sow mustard seeds and rice in oil and mix to warm it up.  Add coconut milk and salt; bring to a boil and cook covered on low heat for 8-10 minutes. Fold in half and then serve hot.
