Spiced Basmati Rice Recipe | Easy Indian Fragrant Rice



Fragrant, delicately spiced basmati rice inspired by Rajasthan, India. A simple but wonderfully aromatic rice dish that would make a great accompaniment to lamb, curry and other Indian dishes.
🌿 About This Recipe

Spiced Basmati Rice is a lightly flavored rice dish made with basmati rice, ghee or oil, cardamom, cloves, cinnamon, fennel seeds, mustard seeds and bay leaves.

The whole spices will give the rice a nice aroma and a light flavour. Best served without the whole spices as eating them can give a bitter taste.

10–12 minutes with a 5 minute standing time
🛒 Ingredients

1¼ cups basmati rice

2 tablespoons of ghee, vegetable or peanut oil. 

5 green cardamom puns (puns), bruised

5 cloves 

½ cinnamon stick 

1 teaspoon fennel seeds 

½ teaspoon of black mustard seeds 

2 bay leaves

2 cups cold water 

1½ teaspoons salt, or to taste black pepper. 

👩‍🍳 How to Make Spiced Basmati Rice 

1.Wash and soak the rice.Rinse and soak the rice. Rinse basmati rice until the water is clear. Place the rice in a bowl of fresh cold water and soak for 30 minutes. Drain well and set aside.

2. Fry the Whole Spices In a large pot, heat the ghee or oil over medium high heat. Then add the cardamom, cloves, cinnamon, fennel seeds, mustard seeds and bay leaves. Stir and cook 20-30 seconds. Stir in the drained rice and add the flavored ghee or oil so that the rice is coated with the flavored ghee.

3. Cook the Rice Pour in the 2 cups of water and add the salt. Heat water until boiling. Slowly lower the heat and close the saucepan with a lid. Cook for 8-10 minutes, without opening the lid, or until cooked and all liquid is absorbed. 

4. Fluff and Rest Turn off the heat. Gently fluff the rice, using a fork to break apart the rice grains. Season with salt and pepper as desired and taste. Cover and let rice stand for 5 minutes before serving.
