Lamb Chump Chops with Yoghurt & Mint – Spicy Grilled Lamb Recipe
🥩 Ingredients :
- 4 small lamb chump chops (about 2cm / ¾ inch thick) approximately 400g
- 6 tablespoons of thick natural plain yoghurt or curd
- 2 large cloves of garlic, cloves peeled
Mint leaves: a handful of fresh mint leaves
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- ½ teaspoon cayenne pepper
- 1 teaspoon salt
Add black pepper to taste.
👨🍳 Method :
1. Prepare the Yoghurt Marinade
Place the yoghurt, garlic, fresh mint, cumin, coriander, cayenne pepper, salt and black pepper in a blender.
Blend until you have a smooth, thick and spicy yoghurt paste. Alternatively, finely chop the garlic and mint, and combine them by hand.
2. Heat the Grill
Heat grill up to VERY HOT.
3. Coat the Lamb
Spread spiced yoghurt mixture on both sides of each lamb chop. Ensure good coating of the chop.
4. Grill the Lamb
Place the lamb chops under the hot grill.
Fry about 4 minutes on each side or until the skin is set and lightly browned on the edges.
When juicy lamb, the centre should be slightly pink. The amount of time it takes to cook the chops will depend on the thickness of each chop and the grill you use.
5. Serve
Take lamb off grill and let rest a few minutes before serving.
